This recipe on orange cupcakes is very easy to do and it doesn’t require a lot of time. As this is the season of oranges, now is the best time to make some orange cupcakes.
115 g butter
115 g caster sugar
2 eggs beaten
Zest of 1/2 of an orange
Orange juice-one tablespoon
115 g self raising flour
Orange butter cream icing
1 tablespoon orange juice
125 g Unsalted butter
300 g icing sugar
Zest of ½ orange
First of all heat oven to 350°F, then start preparing 12 muffin cups with foil liners or paper.
With a wooden spoon mix together the butter and sugar until it becomes creamy (if you want you can use electric mixer)
On the creamy mixture that you created add the beaten eggs, 1 tablespoon orange juice, orange zest and sifted flour- mix this until it becomes like a paste and with a spoon fill the cupcakes with the mixture about 2/3 full.
Bake the cupcakes for about 20 minutes, until they slightly rise and get like gold/ light brown color
After remove them from the oven and let it cool down.
Now time to prepare the topping with orange butter cream.
In a bowl mix together one tablespoon of orange juice, butter and orange zest, cream them together with electric mixer or a wooden spoon, whatever suits best to you.
After mixing it good add the icing sugar and continue to mix.
Now time to spread the mixture all over your cupcakes or you can pipe it by making a hole on the top of cupcakes, whatever you look, both ways are delicious.
